Kimchi stew and soju is like beer and pizza. They go perfectly well together. This was taken at a Korean restaurant in Makati Avenue one Friday night after watching a gig of a local band at Kwago's Grill. We've already had a few bottles during the band's first set when our Korean friend Shin suggested we transfer to another place. And then we found ourselves glugging down bottles of soju as if it was just some apple juice in another restaurant. The very spicy kimchi stew helped but it still gave me a real headache the morning after.
Kimchi stew is one of Korea's most favorite dishes. It has, of course, kimchi, pork belly and tofu. Soju, meanwhile, is the traditional Korean liquor similar to vodka.
